- 6 hard-boiled eggs
- 8 ounces small pasta (ditalini, penne, or elbow macaroni)
- 3/4 cup mayonnaise
- 1 1/2 tablespoons Dijon mustard
- 1 teaspoon white vinegar or lemon juice
- 1 clove garlic, minced or made into a paste
- 1/2 teaspoon kosher salt, to taste
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
- 2 tablespoons finely diced red onion
- 2 tablespoons sliced green onions
Instructions
- Cook the pasta in boiling water until al dente according to package instructions. Drain and rinse under cold water.
- In a mixing bowl, whisk together mayonnaise, Dijon mustard, vinegar or lemon juice, and minced garlic until smooth.
- Gently fold in chopped hard-boiled eggs and cooked pasta into the dressing. Season with salt, smoked paprika, cayenne pepper, diced red onion, and sliced green onions.
- Cover and refrigerate for at least 30 minutes to allow flavors to meld before serving.
