  • 1 teaspoon paprika
  • Β½ teaspoon chili powder
  • Salt and pepper to taste

  • 1 tablespoon olive oil
  • 1 lime, juiced
  • 1 cup vegetable broth

Instructions

  1. Preheat your oven to 375Β°F (190Β°C).
  2. Boil peeled and cubed sweet potatoes for about 10 minutes until fork-tender; drain.
  3. In a skillet, heat olive oil over medium heat and sautΓ© diced red onion and bell pepper for 5 minutes. Add minced garlic and sautΓ© for another minute.
  4. In a mixing bowl, combine sweet potatoes, black beans, corn, sautΓ©ed vegetables, spices, lime juice, salt, and pepper; mix well.
  5. In a greased 9Γ—13-inch baking dish, layer half of the mixture followed by half of the shredded cheese. Repeat layers.
