  • ΒΎ cup Nilla wafers (crushed)
  • Β½ cup butter (melted)
  • 28 ounces sweetened condensed milk
  • Β½ cup Greek yogurt
  • Zest and juice of 2 lemons
  • Β½ cup fresh strawberries (for purΓ©e)
  • ΒΌ cup water
  • 1 tablespoon white sugar
  • 1 tablespoon cornstarch
  • 2 teaspoons vanilla extract
  • 2 tablespoons fresh parsley (for garnish)

Instructions

  1. In a small saucepan, combine strawberries, water, sugar, and cornstarch. Cook until thickened. Let cool.
  2. Preheat oven to 350Β°F (175Β°C). Mix crushed graham crackers and Nilla wafers with melted butter and sugars. Press into a pie dish and bake for 10 minutes.
  3. In a bowl, whisk together sweetened condensed milk, Greek yogurt, lemon zest and juice until smooth.
  4. Pour the filling into the cooled crust and bake for another 10–12 minutes until edges are set.
  5. Cool at room temperature and then refrigerate for at least 4 hours before serving.
  6. Top with whipped cream mixed with strawberry purΓ©e just before serving.
