  • Large Portobello Mushrooms (12-16)
  • Fresh Spinach (10 ounces)
  • Feta Cheese (4 ounces)
  • Yellow Onion (1 medium)
  • Garlic (3-4 cloves)
  • Cream Cheese (4 ounces)
  • Breadcrumbs (Β½ cup)
  • Parmesan Cheese (ΒΌ cup, grated)
  • Olive Oil (3 tablespoons)
  • Dried Oregano (1 teaspoon)
  • Dried Thyme (Β½ teaspoon)
  • Red Pepper Flakes (optional)
  • Salt and Black Pepper

Instructions

  1. Preheat your oven to 375Β°F (190Β°C).
  2. Remove stems from portobello mushrooms and clean caps with a damp cloth. Brush with olive oil.
  3. In a frying pan over medium heat, sautΓ© diced onion in 1 tablespoon olive oil until translucent. Add minced garlic and cook for another minute.
  4. Stir in fresh spinach and cook until wilted, about 2-3 minutes. Let cool slightly.
