Instructions

  1. Preheat your oven to 375°F (190°C) and grease a cast iron skillet or baking dish generously with butter or nonstick spray.
  2. In a large bowl, whisk together yellow cornmeal, all-purpose flour, baking powder, baking soda, and salt.
  3. In another bowl, whisk together buttermilk, honey, eggs, and melted butter until smooth.
  4. Pour the wet mixture into the dry ingredients and stir gently until combined. Fold in chopped jalapeños and chopped cilantro.
  5. Transfer the batter into your greased skillet or baking dish. Smooth out the top and arrange thin slices of jalapeño on top for garnish.
