  • 2–3 pounds skirt steak
  • Salt and pepper to taste
  • 1 cup fresh parsley
  • 1 cup fresh cilantro
  • 1/4–1/3 cup olive oil (for chimichurri)
  • 1/2 medium onion (diced)
  • 3 garlic cloves (for chimichurri)
  • 3 tablespoons fresh lime juice (for chimichurri)
  • 2 tablespoons red apple vinegar
  • 1/2 teaspoon salt (for chimichurri)
  • 1/2 teaspoon pepper (for chimichurri)
  • Optional: 1/4 teaspoon red pepper flakes

Instructions

  1. In a mixing bowl, whisk together olive oil, fresh orange juice, fresh lime juice, soy sauce, and minced garlic to create the marinade.
  2. Place skirt steak in a resealable bag or shallow dish; pour marinade over it and refrigerate for at least 6 hours or overnight.
  3. For the chimichurri sauce, mix parsley, cilantro, olive oil, diced onion, garlic, lime juice, salt, and pepper in another bowl.
  4. Preheat grill to medium-high heat. Remove steak from marinade and grill each side for about 5 minutes until desired doneness.
  5. Let the steak rest for 5 minutes before slicing against the grain and serving topped with chimichurri sauce.
