  • 2/3 cup heavy cream
  • 5–6 ladyfingers
  • ΒΌ cup cold-brewed coffee
  • 1 ΒΌ cups fresh raspberries
  • Cocoa powder (for dusting)

Instructions

  1. In a heatproof bowl, whisk together egg yolks and sugar until pale yellow. Place over simmering water and cook while stirring for about 5–7 minutes until thickened.
  2. Remove from heat, let cool slightly, then whisk in vanilla extract and mascarpone cheese until smooth.
  3. In another bowl, beat heavy cream until stiff peaks form. Gently fold into the mascarpone mixture.
  4. Brush ladyfingers with cold-brewed coffee, cut into pieces, and layer them with the mascarpone mixture and fresh raspberries in serving glasses.
  5. Finish with a layer of mascarpone on top, dust with cocoa powder, cover, and refrigerate for at least one hour before serving.
