  • 3/4 cup (108g) brown sugar
  • 1/4 cup (52g) sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 2 cups (260g) all purpose flour
  • 1 tsp baking soda
  • 1 tsp cornstarch
  • 1/2 tsp salt
  • 3/4 cup (125g) semi-sweet chocolate chips
  • 3/4 cup (146g) chopped M&Ms
  • 2–3 tbsp red, white and blue sprinkles
  • 1/2 cup (112g) salted butter
  • 1/2 cup (95g) shortening
  • 4 cups (460g) powdered sugar
  • 1 1/2 tsp vanilla extract
  • 2–3 tbsp water or milk
  • Red gel icing color
  • Sprinkles

Instructions

  1. Preheat oven to 350Β°F (176Β°C) and spray a cupcake pan with non-stick cooking spray.
  2. In a mixing bowl, cream together unsalted butter, brown sugar, and granulated sugar until light and fluffy (3–4 minutes).
  3. Add the egg and vanilla extract; mix well.
  4. In another bowl, whisk together flour, baking soda, cornstarch, and salt. Gradually add to the butter mixture until combined.
  5. Stir in chocolate chips, chopped M&Ms, and sprinkles.
  6. Form dough balls (about 2 tablespoons each) and press them into the cupcake pan molds.
  7. Bake for 10–12 minutes until golden around the edges. Let cool slightly before transferring to a cooling rack.
  8. Prepare frosting by beating together salted butter and shortening until smooth; gradually add powdered sugar and vanilla extract until desired consistency is achieved.
  9. Color half of the frosting with red gel icing color; fill piping bags with each color side by side for decoration.
  10. Once cookies are cool, pipe swirls of frosting on top and decorate with additional sprinkles.
