Ingredients
- 30 Oreo Cookies (crushed)
- 5 tablespoons unsalted butter (melted)
- 24 oz cream cheese (full-fat)
- 1 cup granulated sugar
- 1 tablespoon cornstarch
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 3 large eggs
- 12โ15 Oreo cookies (chopped for filling)
- 4 oz semi-sweet chocolate (finely chopped)
- 1/2 cup whipping cream
Instructions
- Preheat your oven to 325F (170C). Prepare a 9-inch springform pan by wrapping it in aluminum foil.
- For the crust, mix crushed Oreo cookies with melted butter until combined. Press this mixture firmly into the bottom of the prepared pan.
- In a mixing bowl, beat together cream cheese and sugar until smooth. Add cornstarch, sour cream, vanilla extract, and eggs one at a time, mixing just until combined.
- Fold in chopped Oreo cookies gently into the batter. Pour the mixture over the crust in the springform pan.
- Bake in preheated oven for about 55 minutes until set but slightly jiggly in the center. Remove from oven and let cool at room temperature before refrigerating for at least four hours.
- For the ganache, heat whipping cream until simmering then pour over chopped chocolate; stir until smooth. Allow to cool slightly before pouring over chilled cheesecake.
- Decorate with whipped cream and additional crushed Oreos if desired.
