  • 1/3 cup mayonnaise
  • 1/4 cup sour cream
  • 1 teaspoon Dijon mustard
  • 1–2 teaspoons sweet pickle juice
  • 1/2 sweet onion (finely chopped)
  • 3 celery ribs (finely chopped)
  • 1/8 cup sweet pickles (finely chopped)
  • 2 hard-cooked eggs (chopped)
  • 1/8 cup fresh chives (chopped)
  • Salt and freshly ground pepper
  • 1/2 cup pasta cooking water

Instructions

  1. Bring a large pot of salted water to a boil. Add elbow macaroni and cook according to package directions until tender. Reserve some pasta cooking water before draining.
  2. In a mixing bowl, combine mayonnaise, sour cream, Dijon mustard, sweet pickle juice, salt, and pepper. Mix well.
  3. Add finely chopped onion, celery, and sweet pickles to the dressing mixture. Gently fold in the cooked macaroni along with about 1/2 cup of reserved pasta cooking water.
  4. Finally, mix in chopped hard-cooked eggs and fresh chives until everything is well combined.
  5. Chill in the refrigerator for at least an hour before serving.
