  • 3 tablespoons coconut flour
  • 1 teaspoon xanthan gum
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cubed & chilled
  • 1 oz cream cheese, softened
  • 1 egg
  • 2 teaspoons rice vinegar
  • 5 lemons
  • 1 cup powdered allulose
  • pinch of salt
  • 5 egg yolks
  • 8 tablespoons unsalted butter, cubed

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC) and grease a mini muffin pan.
  2. In a food processor, combine almond flour, coconut flour, xanthan gum, and salt. Add chilled butter and softened cream cheese; pulse until crumbly.
  3. Mix in an egg and rice vinegar until the dough holds together but remains chunky. Roll out between parchment paper until 1/2 cm thick.
  4. Cut circles from the dough using a biscuit cutter and press them into the muffin pan cavities. Bake for 5-7 minutes until golden, then cool on a wire rack.
  5. For the lemon curd, zest four lemons and juice enough for 1/2 cup. In a saucepan, whisk together allulose, lemon zest, juice, salt, and egg yolks over medium heat until thickened. Stir in cubed butter gradually.
  6. Cool the curd completely before filling each tart shell to the top.
