Instructions

  1. Preheat oven to 425ยฐF (220ยฐC).
  2. Roast poblano chiles over gas stovetop until charred. Place in a plastic bag to steam for 10 minutes, then peel and chop.
  3. In a cast-iron skillet, heat olive oil over moderate heat. Add chopped poblanos and cherry tomatoes; cook for about 4 minutes until softened. Stir in garlic and cook for another minute.
  4. Add tomato sauce, chili powder, and oregano; simmer on low heat for 10 minutes until thickened. Stir in cider vinegar.
  5. Crack eggs into the sauce; sprinkle with queso fresco and Muenster cheese around each egg.
