Instructions
- Preheat your oven to 325Β°F (160Β°C) and line a 9 x 5-inch loaf pan with parchment paper.
- In a microwave-safe bowl, combine diced butter, granulated sugar, and cocoa powder; microwave for 30 seconds, stir, then microwave again for another 30 seconds until melted.
- Mix in salt and vanilla extract, followed by the egg and flour until just combined.
- Pour the batter into the prepared pan and bake for about 23 minutes; cool completely before cutting into cubes.
- For the pudding, whisk together sugar, cornstarch, salt, and milk in a saucepan over medium heat until thickened; remove from heat and mix in fruit juice and butter.
- In serving dishes, layer brownie cubes with pudding mixture and refrigerate for at least four hours.
