Ingredients

Scale
  • 2 cups warm water
  • 1 packet instant yeast
  • 1 tablespoon molasses or honey
  • 5 1/2 cups all-purpose flour
  • 1 teaspoon kosher salt
  • 6 tablespoons salted butter
  • 1/4 cup baking soda
  • 1 egg (beaten)
  • Pretzel salt or flaky sea salt

Instructions

  1. In a stand mixer bowl fitted with a dough hook, combine warm water, yeast, molasses, flour, salt, and 2 tablespoons of softened butter. Mix until dough forms (about 1-2 minutes).
  2. Cover and let rise in a warm place for 1-2 hours until doubled in size.
  3. Preheat the oven to 425Β°F and line two baking sheets with parchment paper.
  4. Punch down the dough and divide into 10-12 equal pieces. Shape each piece into a bagel by poking a hole in the center and stretching it gently.
  5. Boil water with baking soda in a large pot. Boil each bagel for 3 minutes on one side and then flip to boil for an additional 1-2 minutes.
  6. Transfer boiled bagels to the prepared baking sheet. Brush with beaten egg and sprinkle generously with salt before baking for about 20-25 minutes until golden brown.
