  • 1 small red onion
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 small head broccoli
  • 1 (20 oz) can pineapple chunks
  • ΒΌ cup pineapple juice
  • ΒΌ cup rice apple vinegar
  • β…“ cup soy sauce
  • 2 tablespoons arrowroot powder

Instructions

  1. Heat 1 tablespoon of avocado oil in a large pan over medium-high heat. Add diced chicken and cook until browned and fully cooked through, then remove it from the pan.
  2. In the same pan, add remaining avocado oil and stir-fry diced red onion, red bell pepper, yellow bell pepper, and broccoli until tender-crisp.
  3. Whisk together reserved pineapple juice, rice apple vinegar, soy sauce, sesame oil, and arrowroot powder in a bowl until smooth.
  4. Return cooked chicken and pineapple chunks to the pan. Pour sauce over everything, stirring well to combine. Cook until sauce thickens.
