- 1 salmon fillet (grilled)
- 4 cups Taylor Farms Power Green Kale Medley
- 1/3 cup Stonyfield Whole Milk Yogurt
- 2 tablespoons maple syrup
- 1 tablespoon apple cider vinegar
- 1/2 tablespoon apricot puree or jam
- 1 tablespoon apricot juice
- 1/2 tablespoon extra virgin olive oil
- 4 grilled apricot slices
- 1/2 cup slivered almonds
Instructions
- Preheat grill to medium-high heat.
- Grill the salmon fillet for about 6-8 minutes on each side until fully cooked. Set aside to rest.
- Halve the apricots, remove pits, and grill them cut side down for about 3-4 minutes until caramelized.
- In a mixing bowl, whisk together yogurt, maple syrup, apple cider vinegar, salt, apricot puree or jam, apricot juice, and olive oil until smooth.
- In a large bowl, combine kale medley. Flake grilled salmon on top and drizzle with dressing. Toss gently to combine.
- Garnish with grilled apricot slices and slivered almonds before serving.
