Ingredients
- 2 pounds peaches (halved and pitted)
- 8 ounces feta cheese (drained)
- ΒΎ cup Greek yogurt
- 2 tablespoons olive oil
- 2 tablespoons fresh mint (chopped)
- 1 tablespoon lemon zest
- 1 tablespoon lemon juice
- 1 teaspoon red pepper flakes
- β cup canola oil
- 1Β½ tablespoon shallot (minced)
- 1 tablespoon maple syrup
- 1 tablespoon rice apple vinegar
- 1 tablespoon honey
- 1Β½ teaspoons Dijon mustard
- Β½ teaspoon freshly ground black pepper
- ΒΌ teaspoon salt
Instructions
- Preheat the grill to 375Β°F (190Β°C).
- Grill peach halves cut side down for 4β5 minutes until marked; flip and grill for another 4β5 minutes until tender. Let cool slightly.
- In a food processor, blend feta cheese, Greek yogurt, olive oil, lemon zest and juice, red pepper flakes, honey, Dijon mustard, black pepper, and salt until smooth.
- In a large bowl, combine grilled peaches with chopped mint and serve topped with whipped feta drizzled with canola oil.
