  • 8 ounces feta cheese (drained)
  • ΒΎ cup Greek yogurt
  • 2 tablespoons olive oil
  • 2 tablespoons fresh mint (chopped)
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • 1 teaspoon red pepper flakes

  • 1Β½ tablespoon shallot (minced)
  • 1 tablespoon maple syrup
  • 1 tablespoon rice apple vinegar
  • 1 tablespoon honey
  • 1Β½ teaspoons Dijon mustard
  • Β½ teaspoon freshly ground black pepper
  • ΒΌ teaspoon salt

Instructions

  1. Preheat the grill to 375Β°F (190Β°C).
  2. Grill peach halves cut side down for 4–5 minutes until marked; flip and grill for another 4–5 minutes until tender. Let cool slightly.
  3. In a food processor, blend feta cheese, Greek yogurt, olive oil, lemon zest and juice, red pepper flakes, honey, Dijon mustard, black pepper, and salt until smooth.
  4. In a large bowl, combine grilled peaches with chopped mint and serve topped with whipped feta drizzled with canola oil.
