Ingredients
- 2 large boneless, skinless chicken breasts
- 1 fresh pineapple
- 2 tablespoons olive oil
- 2 tablespoons soy sauce

- 1 Β½ cups jasmine rice
- 1 ΒΌ cups coconut milk
- 1 ΒΌ cups water
- 1 tablespoon sugar (optional)
- Β½ teaspoon salt
- 1 avocado, sliced
- 1 small red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- ΒΌ cup fresh cilantro, chopped
- Lime wedges, for serving

Instructions
- Prepare the marinade by whisking olive oil, soy sauce, honey, lime juice, rice vinegar, minced garlic, smoked paprika, ground ginger, salt, and pepper in a bowl. Set aside half for basting.
- Marinate chicken in the remaining mixture for at least 15 minutes.
