  • 1 ΒΌ cups coconut milk
  • 1 ΒΌ cups water
  • 1 tablespoon sugar (optional)
  • Β½ teaspoon salt
  • 1 avocado, sliced
  • 1 small red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • ΒΌ cup fresh cilantro, chopped
  • Lime wedges, for serving
  • Sesame seeds, for garnish (optional)

Instructions

  1. Prepare the marinade by whisking olive oil, soy sauce, honey, lime juice, rice vinegar, minced garlic, smoked paprika, ground ginger, salt, and pepper in a bowl. Set aside half for basting.
  2. Marinate chicken in the remaining mixture for at least 15 minutes.
  3. Cook jasmine rice with coconut milk and water in a saucepan until tender.
  4. Grill marinated chicken for about 6–7 minutes per side until cooked through. Grill pineapple until caramelized.
  5. Assemble bowls with coconut rice as the base; top with sliced grilled chicken, pineapple, avocado, cherry tomatoes, and cilantro. Serve with lime wedges.
