Ingredients

Scale
  • 2 cups sugar
  • 1 cup softened butter
  • 3 large eggs
  • 1 1/2 teaspoons pure vanilla extract
  • 2 1/2 cups cake flour
  • 1 cup baking cocoa (sifted)
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/2 cup instant chocolate pudding mix
  • 2 1/4 cups buttermilk
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup water
  • 3 1/2 cups powdered sugar
  • 3 tablespoons heavy cream (more or less for consistency)

Instructions

  1. Preheat the oven to 350ยฐF (175ยฐC) and grease a 9ร—13 inch baking pan.
  2. In a mixing bowl, cream together softened butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition, then stir in vanilla.
  3. In another bowl, whisk together cake flour, baking cocoa, baking soda, salt, and instant pudding mix.
  4. Gradually add the dry mixture to the wet mixture alternately with buttermilk until just combined.
  5. Pour batter into the prepared pan and bake for about 60 minutes or until a toothpick inserted in the center comes out clean.
  6. For the ganache icing, melt semi-sweet chocolate chips with water and butter in a saucepan over low heat. Stir in sifted cocoa powder and powdered sugar; adjust consistency with heavy cream as needed.
  7. Once the cake cools completely, pour ganache over it evenly and let it set before serving.
