Ingredients
- 2 large chicken breasts
- 300g penne pasta
- 500g baby potatoes
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- Salt & pepper to taste
- 1 tsp dried oregano
- Juice of lemon
- 1 tbsp butter
- 3 cloves garlic, minced
- 200ml heavy cream
- 50g grated Parmesan
- 2 tbsp chopped parsley
- 1 tsp Italian seasoning
- Fresh parsley for garnish
Instructions
- Marinate chicken breasts with olive oil, lemon juice, paprika, garlic powder, oregano, salt, and pepper for 15 minutes.
- Toss halved baby potatoes with olive oil, garlic powder, Italian seasoning, salt, and pepper. Roast at 200C (400F) for 25-30 minutes until golden brown.
- Cook penne pasta in salted water until al dente; drain.
- In a skillet, melt butter and sautรฉ minced garlic before adding heavy cream and Parmesan cheese to create the sauce.
- Combine cooked pasta with the cream sauce and stir in chopped parsley.
- Grill marinated chicken until fully cooked; slice into strips.
- Serve pasta topped with sliced chicken alongside roasted potatoes.
