  • 2 large chicken breasts
  • 300g penne pasta
  • 500g baby potatoes
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • 1 tsp dried oregano
  • Juice of lemon
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 200ml heavy cream
  • 50g grated Parmesan
  • 2 tbsp chopped parsley
  • 1 tsp Italian seasoning
  • Fresh parsley for garnish

Instructions

  1. Marinate chicken breasts with olive oil, lemon juice, paprika, garlic powder, oregano, salt, and pepper for 15 minutes.
  2. Toss halved baby potatoes with olive oil, garlic powder, Italian seasoning, salt, and pepper. Roast at 200C (400F) for 25-30 minutes until golden brown.
  3. Cook penne pasta in salted water until al dente; drain.
  4. In a skillet, melt butter and sautรฉ minced garlic before adding heavy cream and Parmesan cheese to create the sauce.
  5. Combine cooked pasta with the cream sauce and stir in chopped parsley.
  6. Grill marinated chicken until fully cooked; slice into strips.
  7. Serve pasta topped with sliced chicken alongside roasted potatoes.
