  • 2 cups sugar
  • 1/4 cup light corn syrup
  • 1/2 cup water
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
  • 1 cup white chocolate
  • 1 cup dark chocolate

Instructions

  1. Wash and dry the apples thoroughly. Prepare a lined baking sheet.
  2. In a small saucepan, melt butter, salt, and heavy cream over medium heat; set aside.
  3. In a medium saucepan, combine sugar, corn syrup, and water; cook until it reaches 320ยฐF.
  4. Slowly whisk in the warm cream mixture and return to heat until it reaches 245ยฐF to 250ยฐF; stir in vanilla extract.
  5. Allow caramel to cool slightly before dipping apple slices (insert sticks first) into caramel.
  6. Refrigerate for 15 minutes. Meanwhile, melt white and dark chocolate using a double boiler.
  7. Drizzle melted chocolate over cooled caramel apples and add desired toppings.
  8. Chill again until set.
