  • 3 celery stalks, chopped
  • 1/2 cup red onion, thinly sliced
  • 1 cup sharp cheddar cheese, cubed
  • 2 gala apples, thinly sliced
  • Freshly cracked black pepper
  • 1/4 cup extra virgin olive oil
  • 1/2 lemon, juiced
  • 1 tablespoon dijon mustard
  • 2 tablespoons red apple vinegar
  • 1/2 teaspoon oregano
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon salt

Instructions

  1. In a large mixing bowl, combine chopped romaine lettuce, chopped celery stalks, sliced red onion, cubed cheddar cheese, and sliced gala apples. Season with freshly cracked black pepper and toss well.
  2. In a mason jar or salad dressing container, combine olive oil, lemon juice, dijon mustard, red apple vinegar, oregano, salt, and pepper. Shake well to combine.
  3. Pour half of the dressing over the salad and toss gently to coat evenly. Taste and add more dressing if desired.
