Instructions
- Preheat your oven to 350°F (175°C).
- Mix the cream cheese filling by combining 6 oz cream cheese, 3 TBSP white sugar, and 1 tsp vanilla in a bowl until smooth; set aside.
- In another bowl, whisk together 3 cups flour, 1 tsp baking soda, 1 tsp salt, 2 tsp cinnamon, and 1/4 tsp nutmeg.
- In a large mixing bowl, combine 1 cup melted butter, 1 cup brown sugar, 1/2 cup white sugar, 2 large egg yolks, 1 cup grated carrots, and an additional 1 tsp vanilla until well mixed.
- Gradually add the dry ingredients to the wet mixture until just combined.
- Scoop dough onto lined baking sheets and create indentations for the filling.
- Add about a teaspoon of cream cheese filling into each indentation.
- Bake for 15 minutes or until edges are golden but centers remain soft.
