Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the cream cheese filling by combining 6 oz cream cheese, 3 TBSP white sugar, and 1 tsp vanilla in a bowl until smooth; set aside.
  3. In another bowl, whisk together 3 cups flour, 1 tsp baking soda, 1 tsp salt, 2 tsp cinnamon, and 1/4 tsp nutmeg.
  4. In a large mixing bowl, combine 1 cup melted butter, 1 cup brown sugar, 1/2 cup white sugar, 2 large egg yolks, 1 cup grated carrots, and an additional 1 tsp vanilla until well mixed.
  5. Gradually add the dry ingredients to the wet mixture until just combined.
  6. Scoop dough onto lined baking sheets and create indentations for the filling.
  7. Add about a teaspoon of cream cheese filling into each indentation.
  8. Bake for 15 minutes or until edges are golden but centers remain soft.
  9. Cool on wire racks before serving.
