  • 2/3 cup granulated sugar
  • 1 1/2 teaspoon all-purpose flour
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/2 cup canola oil
  • 1/4 cup unsweetened applesauce
  • 2/3 cup granulated sugar
  • 1/3 cup packed light-brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/3 cups finely grated carrots
  • 2 oz cream cheese, softened
  • 1 tablespoon butter, softened
  • 1 1/4 cups powdered sugar
  • 1/4 cup + 2 tablespoon sour cream
  • 1/2 teaspoon vanilla extract
  • 1/2 cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC) and grease a 9-inch springform pan.
  2. In a mixing bowl, beat together softened cream cheese and granulated sugar until smooth. Add flour, eggs, vanilla extract, and sour cream; mix until combined.
  3. In another bowl, mix flour with baking soda, baking powder, salt, cinnamon, and nutmeg. In a separate bowl, whisk oil, applesauce, sugars, eggs, and vanilla extract. Gradually combine dry ingredients with wet ingredients; fold in grated carrots.
  4. Pour half of the carrot cake batter into the springform pan. Spread the cheesecake mixture on top evenly and finish with the remaining carrot cake batter.
  5. Bake for about 60 minutes or until set. Allow cooling before removing from the pan.
