Ingredients
- 2 lbs stewing beef, cut into cubes
- 1 tablespoon vinegar or lime juice
- 1 tablespoon vegetable oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme (or Β½ teaspoon dried)
- 1 scotch bonnet pepper, whole (optional)
- 2 green onions, chopped
- 1 bell pepper, chopped
- 2 carrots, chopped
- 2 tablespoons tomato paste
- 2 cups beef broth or water
- 1 teaspoon allspice
- Β½ teaspoon paprika
- Salt and pepper to taste
- 14 oz can diced tomatoes
- Cooked white rice for serving
Instructions
- Clean the beef with vinegar or lime juice and rinse well.
- Season meat with salt, black pepper, allspice, and paprika; marinate for at least 30 minutes if possible.
- Heat vegetable oil in a large pot over medium-high heat; brown beef on all sides in batches. Set aside.
- In the same pot, sautΓ© onion, garlic, bell pepper, green onions, and thyme until softened (about 5 minutes).
- Mix in tomato paste; cook for another minute before adding diced tomatoes.
- Return the beef to the pot; pour in broth or water and add scotch bonnet pepper if using. Stir well.
- Bring to a boil then reduce heat to low; cover and simmer for about 1.5 to 2 hours.
- Add carrots during the last 30 minutes of cooking.
- Before serving, remove the scotch bonnet pepper and serve hot over cooked white rice.
