  • 2 lbs stewing beef, cut into cubes
  • 1 tablespoon vinegar or lime juice
  • 1 tablespoon vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme (or Β½ teaspoon dried)
  • 1 scotch bonnet pepper, whole (optional)
  • 2 green onions, chopped
  • 1 bell pepper, chopped
  • 2 carrots, chopped
  • 2 tablespoons tomato paste
  • 2 cups beef broth or water
  • 1 teaspoon allspice
  • Β½ teaspoon paprika
  • Salt and pepper to taste
  • 14 oz can diced tomatoes
  • Cooked white rice for serving

Instructions

  1. Clean the beef with vinegar or lime juice and rinse well.
  2. Season meat with salt, black pepper, allspice, and paprika; marinate for at least 30 minutes if possible.
  3. Heat vegetable oil in a large pot over medium-high heat; brown beef on all sides in batches. Set aside.
  4. In the same pot, sautΓ© onion, garlic, bell pepper, green onions, and thyme until softened (about 5 minutes).
  5. Mix in tomato paste; cook for another minute before adding diced tomatoes.
  6. Return the beef to the pot; pour in broth or water and add scotch bonnet pepper if using. Stir well.
  7. Bring to a boil then reduce heat to low; cover and simmer for about 1.5 to 2 hours.
  8. Add carrots during the last 30 minutes of cooking.
  9. Before serving, remove the scotch bonnet pepper and serve hot over cooked white rice.
