Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Grease two 9-inch cake pans.
  2. In a mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  3. Mix in the buttermilk, vanilla extract, and optional lemon zest until combined.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry mixture to the wet mixture until just combined.
  5. Gently fold in the fresh blackberries.
  6. Divide batter between prepared pans and bake for approximately 30–32 minutes or until a toothpick comes out clean. Cool cakes in pans for 10 minutes before transferring to a cooling rack.
  7. For frosting, beat cream cheese and butter until smooth; gradually mix in powdered sugar and blackberry puree until creamy.
