  • 1 tsp cumin powder
  • 2 tbsp olive oil (for cooking)

Instructions

  1. Preheat oven to 400Β°F (200Β°C). Peel and dice sweet potatoes into small chunks. Toss with olive oil and salt on a baking sheet; roast for 25 minutes until tender.
  2. Mash roasted sweet potatoes in a bowl until smooth but chunky.
  3. Add black beans, garlic, lime juice, cilantro, breadcrumbs, and cumin to the bowl; mix well.
  4. Shape mixture into patties about half an inch thick (makes about eight).
  5. Heat remaining olive oil in a non-stick skillet over medium heat. Cook each patty for about five minutes per side until golden brown and crispy.
