Instructions
- Preheat oven to 375Β°F (190Β°C). Roll out the shortcrust pastry into tartlet molds and trim excess.
- Place parchment paper in each shell and fill with pie weights. Bake for 15 minutes until golden brown.
- In a bowl, whisk together lemon juice, lemon zest, sugar, eggs, and melted coconut oil until smooth.
- Sprinkle agar-agar powder into the mixture while continuously stirring. Heat gently in a saucepan until slightly thickened (about 5 minutes).
- Pour the filling into the baked tartlet shells and chill for at least an hour until firm.
- Serve chilled with fresh berries or whipped coconut cream.
