  • 4 cups powdered sugar
  • Food coloring
  • Colored sprinkles

Instructions

  1. Preheat your oven to 350Β°F (175Β°C) and spray a mini muffin tin with baking spray.
  2. In a microwave-safe bowl, melt unsalted butter and semisweet chocolate chips together until smooth.
  3. Stir in cocoa powder and optional coffee grounds.
  4. Mix in both sugars until combined.
  5. Add eggs one at a time, followed by vanilla extract.
  6. In another bowl, whisk together flour, baking powder, and salt before folding into the wet mixture.
  7. Fill each muffin tin cavity with batter and bake for about 18 minutes.
