  • 150 g Powdered Sugar
  • 8 g Cornstarch
  • 90 g Unsweetened Shredded Coconut
  • Β½ tsp Vanilla Extract
  • 90 g Almonds
  • 170 g White Chocolate
  • 60 ml Whipping Cream
  • 226 g Butter
  • 210 g Powdered Sugar
  • 2 tsp Vanilla Extract
  • ΒΌ tsp Salt
  • 186 g Coconut
  • White Chocolate Bar

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Prepare two greased 8-inch round baking pans.
  2. In a mixing bowl, combine milk and vinegar; let sit for 5 minutes to curdle. Add sugar, oil, and vanilla; whisk until smooth.
  3. In another bowl, mix all-purpose flour, almond flour, baking powder, baking soda, and salt. Gradually add to the wet ingredients; combine gently.
  4. Divide batter between pans and bake for 30–35 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to a rack.
  5. For the coconut filling, whisk together coconut milk, powdered sugar, cornstarch, and shredded coconut until smooth.
  6. To make the buttercream, melt white chocolate and cool slightly. Beat butter until creamy; gradually add powdered sugar and melted chocolate until fluffy.
  7. Assemble by layering cake with filling and frosting the top and sides with buttercream. Decorate with shredded coconut.
