Instructions
- Preheat your oven to 350Β°F (175Β°C). Prepare two greased 8-inch round baking pans.
- In a mixing bowl, combine milk and vinegar; let sit for 5 minutes to curdle. Add sugar, oil, and vanilla; whisk until smooth.
- In another bowl, mix all-purpose flour, almond flour, baking powder, baking soda, and salt. Gradually add to the wet ingredients; combine gently.
- Divide batter between pans and bake for 30β35 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to a rack.
- For the coconut filling, whisk together coconut milk, powdered sugar, cornstarch, and shredded coconut until smooth.
- To make the buttercream, melt white chocolate and cool slightly. Beat butter until creamy; gradually add powdered sugar and melted chocolate until fluffy.
