  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream
  • 1 cup shredded Parmesan cheese
  • 2 cups fresh spinach
  • Seasonings: Italian seasoning, crushed red pepper flakes (optional), salt, and pepper

Instructions

  1. In a large pot over medium heat, heat olive oil and brown the ground turkey until cooked through. Remove from pot.
  2. In the same pot, sautΓ© onion, carrots, and celery until soft. Add garlic and cook for another minute.
  3. Pour in chicken broth and diced tomatoes; return the browned turkey to the pot. Stir in Italian seasoning and optional red pepper flakes. Simmer for about 15 minutes.
  4. Lower heat and gradually stir in heavy cream and shredded Parmesan until creamy.
  5. Add fresh spinach; cook until wilted. Adjust seasoning with salt and pepper as desired.
  6. Serve hot with extra Parmesan if desired.
