  • 3 garlic cloves (minced)
  • 2 stalks celery (or 1/2 small celery root, diced)
  • 2 medium carrots (diced)
  • 2 pounds potatoes (chopped)
  • 4 cups vegetable broth
  • 1/3 cup dairy-free cream
  • Fresh parsley (to garnish)

Instructions

  1. Begin by prepping all your ingredients: dice the onion, mince the garlic, and chop the celery, carrots, and potatoes.
  2. In a large pot over medium heat, add oil. Once hot, sautΓ© the onion until translucent, then add garlic, celery, carrots, potatoes, salt, pepper, dried marjoram, and nutmeg for one minute.
  3. Pour in vegetable broth and bring to a boil. Reduce heat to low and simmer for about 20 minutes until vegetables are tender.
  4. Remove bay leaves if used. Blend half of the soup until smooth using an immersion blender or regular blender.
  5. Combine blended soup back into the pot with dairy-free cream; adjust seasoning as necessary. Simmer for a few more minutes.
  6. Serve hot garnished with fresh parsley.
