Ingredients
- 2 large sweet potatoes (700g), peeled and chopped
- 110ml soy cream

- 1 tbsp vegan butter
- 1 cauliflower, chopped into thick slices
- Olive oil
- Salt and pepper
- Cooked lentils (for garnish)

Instructions
- Preheat your oven to 210°C (410°F).
- Wash and slice the cauliflower into thick steaks, placing them on a parchment-lined baking sheet. Drizzle with olive oil and season with garlic powder, salt, and pepper.
- Roast in the oven for 30 minutes, flipping halfway through until golden brown and tender.
- In a large pot, boil the sweet potatoes in water for 15–20 minutes until tender. Drain.
- Mash the sweet potatoes in a bowl with soy cream and vegan butter until smooth; season to taste.
- Warm the cooked lentils as per package instructions.
- To serve, layer mashed sweet potatoes on plates, top with lentils, and place roasted cauliflower steaks above. Garnish with fresh herbs and chopped pistachios.
