  • 2 teaspoons ground cinnamon
  • 1 tablespoon (8g) all-purpose plain flour (or gluten-free flour)
  • Dash of lemon juice (optional)
  • 2 tablespoons (30g) vegan butter or coconut oil (melted)
  • 3 tablespoons (60g) apricot jam (any light-colored jam)

Instructions

  1. Grease a 9-inch (23 cm) loose-bottom tart pan to prevent sticking during baking.
  2. In a mixing bowl, combine the flour and granulated sugar.
  3. Cut in the chilled vegan butter until the mixture resembles breadcrumbs.
  4. Gradually add cold water, one tablespoon at a time, until the dough comes together.
  5. Roll out the pastry on a floured surface and place it in the prepared tart pan.
