- 3/4 cup cold butter, cut into cubes
- 1 cup light brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg, cold
- 2 teaspoons pure vanilla extract
- 4 ounces good quality semi-sweet baking chocolate, chopped
- 1 1/8 cups semi-sweet chocolate chips, divided
- 3/4 cup coarsely chopped walnuts

Instructions
- Preheat your oven to 400Β°F (200Β°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt.
- In a mixer bowl, cream cold butter with light brown and granulated sugars until creamy. Add the cold egg and vanilla extract; mix to combine.
- Gradually mix in the dry ingredients along with chopped chocolate, 1 cup of chocolate chips, and walnuts until just combined.
- Scoop dough into 10 large balls; lightly press remaining chocolate chips onto each ball.
- Bake for 12-13 minutes until edges are golden brown. Sprinkle with sea salt if desired and cool on wire racks.
