  • 1 teaspoon salt
  • 3/4 cup cold butter, cut into cubes
  • 1 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg, cold
  • 2 teaspoons pure vanilla extract
  • 4 ounces good quality semi-sweet baking chocolate, chopped
  • 1 1/8 cups semi-sweet chocolate chips, divided
  • 3/4 cup coarsely chopped walnuts
  • sea salt, optional

Instructions

  1. Preheat your oven to 400Β°F (200Β°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt.
  3. In a mixer bowl, cream cold butter with light brown and granulated sugars until creamy. Add the cold egg and vanilla extract; mix to combine.
  4. Gradually mix in the dry ingredients along with chopped chocolate, 1 cup of chocolate chips, and walnuts until just combined.
  5. Scoop dough into 10 large balls; lightly press remaining chocolate chips onto each ball.
  6. Bake for 12-13 minutes until edges are golden brown. Sprinkle with sea salt if desired and cool on wire racks.
