  • 3–4 cups low sodium vegetable broth
  • 1/3 cup sundried tomatoes in oil (chopped)
  • Juice of 1/2 lemon
  • 1 cup full-fat coconut milk from a can (OR 1/2 cup heavy cream)
  • 2–3 cups fresh spinach
  • Salt and black pepper to taste
  • Fresh basil leaves (for garnish)

Instructions

  1. Heat olive oil in a heavy-bottomed pot over medium heat. SautΓ© diced onion for 3-4 minutes until translucent. Add minced garlic, oregano, and red pepper flakes; cook for 1-2 minutes more.
  2. Stir in chickpeas and tomato paste, then pour in vegetable broth. Bring to a boil, reduce heat, cover, and simmer for about 15 minutes.
  3. Blend half of the soup until smooth using an immersion blender or standard blender.
  4. Add chopped sun-dried tomatoes, lemon juice, coconut milk (or cream), and spinach to the pot. Simmer for another 5-10 minutes until spinach wilts. Season with salt and black pepper to taste.
  5. Serve hot garnished with fresh basil leaves.
