  • 50 g brown sugar
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 200 g mascarpone cheese
  • 100 g whipping cream
  • 50 g powdered sugar
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons cocoa powder (for dusting)

Instructions

  1. Preheat your oven to 175Β°C (350Β°F) and line a baking sheet with parchment paper.
  2. In one bowl, whisk together flour, espresso powder, baking powder, baking soda, and salt.
  3. In another bowl, beat softened butter with granulated and brown sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture; mix until incorporated.
  5. Gradually combine dry ingredients into the wet mixture until just combined.
  6. Scoop tablespoon-sized dough onto the prepared baking sheet and bake for about 12 minutes or until edges are golden.
  7. Allow cookies to cool before preparing the mascarpone topping by beating mascarpone, whipping cream, powdered sugar, and vanilla until smooth.
  8. Spread mascarpone cream over cooled cookies and dust with cocoa powder before serving.
