  • 2 discs pie crust
  • 2 lbs fresh yellow peaches (about 6โ€“7 peaches)
  • 2 tbsp lemon juice
  • 3/4 cup granulated sugar
  • 1/4 cup + 1 tbsp tapioca starch
  • 1 tsp vanilla extract
  • 1 tsp smoked paprika

Instructions

  1. Prepare the pie crust using your favorite recipe or my Homemade Pie Crust.
  2. Peel and cube the peaches into 1-inch pieces.
  3. In a large bowl, combine cubed peaches with lemon juice, sugar, tapioca starch, vanilla extract, and smoked paprika; mix well.
  4. Preheat your oven to 400ยฐF (200ยฐC).
  5. Roll out one disc of dough and place it in a pie dish; fill with peach mixture.
  6. Roll out the second disc and cut into strips to create a lattice top; weave over the filling.
  7. Brush the lattice with an egg wash made from beaten egg yolk and milk; sprinkle with sugar and add butter cubes on top.
  8. Bake for 40-50 minutes until bubbling; cool for 2-3 hours before serving.
