Ingredients

Scale
  • 1.5 lbs beef short ribs
  • 10 cups water
  • 1 whole yellow onion
  • 2 green onions or 1 Korean leek
  • 2 thick ginger slices
  • 1/2 medium radish
  • 2 tablespoons chopped garlic
  • 1 tablespoon soy sauce
  • Sea salt

Instructions

  1. Rinse the beef short ribs under cold water. In a large pot, add the beef and cover with 10 cups of water.
  2. Add the yellow onion (with skin), green onions or leek, ginger slices, and optional green onion roots.
  3. Bring to a boil over medium-high heat; then reduce to low and simmer for about 90 minutes, skimming off any foam.
