  • 6 tablespoons ketchup
  • 2 tablespoons cider vinegar
  • 6 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh ginger (grated)
  • 2 cloves garlic (grated)
  • 432 g tin pineapple pieces (drained)

Instructions

  1. Season diced chicken with salt and pepper; coat with cornstarch.
  2. Heat vegetable oil in a wok over medium-high heat; fry chicken until golden brown, about 5-7 minutes.
  3. Remove chicken; stir-fry onion and bell peppers for 3-4 minutes.
  4. Whisk together ketchup, cider vinegar, brown sugar, soy sauce, ginger, garlic, and reserved pineapple juice.
  5. Return chicken to the pan; add vegetables and sauce mixture with pineapple; cook until heated through.
  6. Serve hot over rice or noodles, garnished with parsley.
