Ingredients
- 4β5 medium potatoes (Yukon gold or red)

- 5β6 sun-dried tomatoes (chopped)
- 2 tbsp olive oil

Instructions
- Boil the whole unpeeled potatoes in salted water until tender but firm, about 20 minutes. Drain and cool slightly before peeling and cubing.
