Ingredients

Scale
  • 2 1/2 cups all-purpose flour
  • 3 tablespoons sugar
  • 1 teaspoon kosher salt
  • 1 cup cold unsalted butter, cubed
  • 1/4 cup ice water
  • 1 pound fresh strawberries, hulled and sliced
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • Juice from 1/2 lemon
  • 1 cup confectioners’ sugar
  • 1 tablespoon milk
  • Rainbow sprinkles

Instructions

  1. For the crust: In a mixing bowl, combine flour, sugar, and salt. Add cubed butter and mix until crumbly. Gradually add ice water until dough forms. Shape into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. For the filling: In a saucepan over medium heat, combine strawberries, granulated sugar, cornstarch, salt, and lemon juice. Cook until thickened (about 5 minutes). Remove from heat to cool.
  3. Preheat oven to 375Β°F (190Β°C). Roll out half of the chilled dough on a floured surface into a rectangle to fit your baking sheet; place on parchment-lined sheet.
  4. Spread cooled strawberry filling over the dough. Roll out remaining dough and place on top; seal edges by crimping.
  5. Bake for 25–30 minutes until golden brown. Let cool before glazing with combined confectioners’ sugar, milk, and vanilla extract. Top with rainbow sprinkles.
