  • ยฝ cup (113g) unsalted butter (melted)
  • 1 large egg
  • ยฝ teaspoon vanilla extract
  • the juice of half of a lemon (about 2 Tablespoons)
  • zest of one lemon
  • ยผ cup (50g) granulated sugar for the glaze
  • the juice of half of a lemon (about 2 Tablespoons) for the glaze
  • 2 Tablespoons (30mL) warm water for the glaze

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC) and grease a loaf pan.
  2. In a mixing bowl, whisk together flour, sugar, baking soda, and salt.
  3. In another bowl, combine milk, melted butter, egg, vanilla extract, lemon juice, and zest.
  4. Pour the wet mixture into the dry ingredients and gently fold in the strawberries.
  5. Transfer the batter to the prepared loaf pan and bake for about 60 minutes or until a toothpick comes out clean.
  6. While baking, mix sugar, lemon juice, and warm water for the glaze.
  7. After baking, let cool for 10 minutes before glazing.
