Ingredients

Scale
  • 1 cup (3 sticks) unsalted butter, softened
  • 8 oz cream cheese, softened
  • 3 cups granulated sugar
  • 6 large eggs, room temperature
  • 3 cups cake flour, sifted
  • 2 tsp pure vanilla extract
  • 1 tsp almond extract (optional)
  • 1 tsp salt
  • 1 cup heavy whipping cream
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1 cup strawberry jam or preserves
  • 1 cup fresh chopped strawberries
  • 1 cup powdered sugar
  • 2–3 tbsp strawberry puree or juice
  • 1 tbsp milk (as needed for consistency)
  • Pinch of salt
  • Fresh halved strawberries (for decoration)

Instructions

  1. Preheat your oven to 325Β°F (163Β°C) and grease and flour three 8-inch cake pans.
  2. In a large mixing bowl, cream together the unsalted butter and cream cheese until light and fluffy.
  3. Gradually add granulated sugar while continuing to beat for about 4-5 minutes.
  4. Add eggs one at a time, beating well after each addition.
  5. Mix in pure vanilla extract and optional almond extract.
  6. Sift together cake flour and salt; gradually add this mixture into the wet ingredients until just combined.
  7. Divide batter evenly among prepared pans, smoothing the tops.
  8. Bake for 30-40 minutes or until a toothpick inserted in the center comes out clean. Cool cakes in pans for 10 minutes before transferring them to wire racks to cool completely.
  9. In one bowl, beat heavy whipping cream until soft peaks form.
  10. Add powdered sugar and vanilla; continue beating until you reach stiff peaks. Set aside.
  11. In another bowl, beat softened cream cheese until smooth; then mix in strawberry jam or preserves.
  12. Gently fold whipped cream into the strawberry cream cheese mixture until fully combined.
  13. Carefully fold in chopped fresh strawberries.
  14. Place one cooled cake layer on a serving plate.
  15. Spread a generous layer of strawberry cream filling on top.
  16. Add a second layer of cake and repeat with more filling.
  17. Place the final layer on top, then frost the entire cake with remaining strawberry cream filling or whipped cream for a smooth finish.
  18. Chill in the fridge for at least 30 minutes to set.
  19. In a bowl, mix powdered sugar with strawberry puree and enough milk until smooth and pourable consistency is achieved.
  20. Drizzle this glaze generously over the chilled cake, allowing it to drip down sides.
  21. Top with halved fresh strawberries for decoration.
  22. Chill until ready to serve.
