  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 pounds russet potatoes, peeled and diced
  • 1 tablespoon all-purpose flour
  • 3 cups chicken stock
  • 1 cup cheddar cheese, freshly grated
  • 3/4 cup heavy cream

Instructions

  1. Preheat your large pot or Dutch oven over medium-high heat.
  2. Add oil and sear chunks of beef stew meat until browned on all sides. Remove from pot.
  3. In the same pot, sautรฉ diced onion in more oil until softened; then add minced garlic until lightly browned.
  4. Stir in flour for about a minute to create a roux.
  5. Pour in chicken stock, add back seared beef and diced potatoes.
  6. Simmer for one hour or until beef is tender.
  7. Stir in heavy cream and shredded cheddar cheese until melted.
