  • 1 teaspoon ground coriander

  • 1 tablespoon tomato paste
  • 1 (14 oz) can diced tomatoes
  • 1/2 cup beef stock
  • Salt and black pepper to taste
  • 1 tablespoon lemon juice

Instructions

  1. Heat the vegetable oil in a heavy-bottomed pot over medium heat.
  2. SautΓ© the chopped onion until translucent, then add garlic and ginger, cooking until fragrant.
  3. Add the Madras curry powder, cumin, coriander, turmeric, and cayenne pepper; toast for about 2 minutes.
