Ingredients
- 2 lbs lamb shoulder, cut into cubes
- 2 tablespoons vegetable oil or ghee
- 1 large onion, finely chopped
- 4 garlic cloves, minced
- 1-inch piece fresh ginger, grated
- 2 tablespoons Madras curry powder
- 1 teaspoon turmeric
- 1/2 teaspoon cayenne pepper, optional
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cinnamon
- 1 tablespoon tomato paste
- 1 cup crushed tomatoes
- 1 cup beef broth
- 1/2 cup full-fat coconut milk
- Salt and pepper to taste
Instructions
- Heat oil in a large pot over medium heat. Add onion and sautΓ© until translucent (5-7 minutes). Stir in garlic and ginger; cook for another minute.
- Add spices (curry powder, turmeric, cayenne pepper if using, ground cumin, smoked paprika, ground cinnamon) and sautΓ© for about 2 minutes until fragrant.
- Increase heat to medium-high and brown lamb cubes on all sides.
- Stir in tomato paste and crushed tomatoes; then add broth and bring to a simmer.
- Reduce heat to low, cover partially, and simmer for at least 90 minutes until lamb is tender. Stir in coconut milk just before serving.
