Ingredients
- 2 tbsp gochujang
- 1 tbsp gochugaru (or Β½ teaspoon of chili flakes)
- 1/2 tbsp soy sauce
- 1 tsp rice apple vinegar
- 1/2 tbsp sugar
- 1/2 tsp toasted sesame oil
- 1/2 cup water
- 2 tbsp neutral oil (divided)
- 2 packs enoki mushrooms
- 1 clove garlic (minced)
Instructions
- In a small bowl, mix together gochujang, gochugaru, soy sauce, rice vinegar, sugar, toasted sesame oil, and water until smooth.
- Prepare enoki mushrooms by cutting off the roots and washing them under running water. Pat dry and separate into smaller bundles.
- Heat 1 tablespoon of neutral oil in a large skillet over medium-high heat. Cook half the mushrooms for 2 minutes on each side until golden brown; set aside and repeat with remaining mushrooms.
- In the same skillet, add another tablespoon of oil and minced garlic; sautΓ© for 30 seconds. Pour in the prepared sauce and bring to a simmer.
- Add all cooked mushrooms back into the skillet; cook uncovered for 3-4 minutes until evenly coated with sauce.
