  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet (1 oz) taco seasoning mix
  • 1 can (14.5 oz) diced tomatoes with green chilies (Rotel)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 cup salsa
  • 6 small flour or corn tortillas, cut into strips
  • 1 cup shredded Mexican cheese blend
  • Fresh cilantro, chopped for garnish
  • Sour cream, for serving
  • Sliced jalapeΓ±os, optional, for serving
  • Diced avocado, optional, for serving

Instructions

  1. In a large skillet over medium-high heat, brown the ground beef until fully cooked. Drain any excess fat.
  2. Add the diced onion to the skillet and sautΓ© for 3–4 minutes until softened; then stir in minced garlic and cook for another minute.
  3. Mix in taco seasoning and diced tomatoes (including juice); remove from heat.
  4. Spray your slow cooker with non-stick spray and layer as follows: spread salsa on the bottom, add tortilla strips, half the beef mixture, half the black beans, and corn. Repeat layers, ending with tortilla strips topped by remaining salsa.
  5. Cover and cook on low for 4–5 hours or high for 2–3 hours.
  6. About 15 minutes before serving, sprinkle shredded cheese on top to melt.
  7. Garnish with cilantro and serve hot with optional toppings.
