Ingredients
- 1 lb (450g) ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet (1 oz) taco seasoning mix
- 1 can (14.5 oz) diced tomatoes with green chilies (Rotel)
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 cup salsa
- 6 small flour or corn tortillas, cut into strips
- 1 cup shredded Mexican cheese blend
- Fresh cilantro, chopped for garnish
- Sour cream, for serving
- Sliced jalapeΓ±os, optional, for serving
- Diced avocado, optional, for serving
Instructions
- In a large skillet over medium-high heat, brown the ground beef until fully cooked. Drain any excess fat.
- Add the diced onion to the skillet and sautΓ© for 3β4 minutes until softened; then stir in minced garlic and cook for another minute.
- Mix in taco seasoning and diced tomatoes (including juice); remove from heat.
- Spray your slow cooker with non-stick spray and layer as follows: spread salsa on the bottom, add tortilla strips, half the beef mixture, half the black beans, and corn. Repeat layers, ending with tortilla strips topped by remaining salsa.
- Cover and cook on low for 4β5 hours or high for 2β3 hours.
