Ingredients
- 1 pound lean ground beef or ground turkey
- 4 cups chicken broth or vegetable broth

- 15 oz can diced tomatoes
- 8 lasagna noodles broken into bite-sized pieces
- ½ cup ricotta cheese
- 1 cup grated mozzarella cheese
- 1 small yellow onion, diced
- 5 cloves garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- ½ teaspoon onion powder
- ½ teaspoon oregano
- ¼ teaspoon dried rosemary
- ¼ teaspoon red pepper flakes
- 1 teaspoon balsamic vinegar
- ½ cup freshly grated parmesan
- Salt and pepper to taste
- Chopped fresh parsley (optional)
Instructions
- In a large skillet over medium heat, brown the ground beef or turkey until cooked through. Drain excess fat and transfer to the slow cooker.
- Add diced onion, minced garlic, chicken or vegetable broth, marinara sauce, diced tomatoes, and all seasonings to the slow cooker. Stir well to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, stir in broken lasagna noodles and cover until they are tender.
- Once done, stir in balsamic vinegar and grated parmesan cheese. Adjust seasoning with salt and pepper to taste.
